Recipe: Seasonal Vegetables Ratatouille

Vegetables can now be found at the market in all possible colors and shapes and they can be used in many delicious dishes.

Ratatouille is a healthy dish loved by children who identify it with the cartoon film.

For 4 people you will need:

  • 3 medium sized potatoes
  • 3 fresh sausages
  • 2 bell peppers
  • 3 tomatoes
  • 2 zucchinis
  • 4 garlic cloves
  • Thyme, pepper, parsley, salt, olive oil

Wash the potatoes but do not peel them. Cut them, and the zucchinis, tomatoes, belle peppers and sausages, into 1cm-thick wheels. 

Turn the oven on at 250 degrees celsius.

You will need a somewhat deep glass container to put the vegetables as shown in the picture.

Put two spoonfuls of olive oil in the container and begin placing the vegetables, starting from the outer ring and inward to the center.

Slice the garlic cloves and place them between the vegetables.

Place peppers cut into strips on top and pour two spoonfuls of olive oil and two spoonfuls of water. Sprinkle some parsley and thyme on top.

Cover it with aluminium foil and put it in the oven. After 20 minutes, remove the foil and allow them to bake until they change color.

JaMystic advises: the vegetables will let their water out, so if you want them to bake in oil, skip adding water.
